Sorry all, I'm still trying to come to terms with the US equivs - what are bitter greens are they just ordinary greens? (not cabbage).

And while I'm here what is MAP?? (Nothing to do with food but I can't remember which forum I saw it.)

Hi Tenacity,

Bitter Greens are a 'family' of greens.
including Sorrel, Arugula,Curly Endives. Dandilion. etc.

Mesclun : You may see this bagged in stored :a mixture of salad greens such as arugula, dandelion, frisèe, oak leaf, radicchio, and sorrel. It's often packaged as gourmet salad greens and is best raw in salads I think.

Radicchio: My favourite for taste texture and colour to a salad. It is good grills lightly too. with some other veggies. This is the red leaf ball with white ribs. It is part of the Chicory Family I think.

Sorrel: Resembling spinach, sorrel is new to me. I just bought seeds to start tfor the spring. It has a strong flavor - often called for in soup recipes.

Watercress: I think falls into the bitter greens family too.It is part of the mustard family ,dark green leaves with a sharp, peppery flavor and is best eaten raw.
