| I live close to a healthfood store. Everytime I go to the grains and flour section I see alot of the grains that are mentions here: millet,amaranth,basmati rice, spelt, buckwheat groats etc but I have NO idea of how to cook them. It there a website I can go to learn about these grains and a good cookbook that explains these grains and how to cook them. Thankyou. |

Nourishing Traditions is the cookbook I recommend. You get tons of great recipes on every type of food from the usual to the more interesting like fermented or sprouted, instructions on how to cook the various types of foods for best nutritional value, and tons of excerpts from research reports and other good books on health and diet.
The basic steps for all grains are to rinse them well, picking out any odd looking bits, particularly Quinoa which has a toxic coat on it. Put in a medium saucepan with a tight lid and cover with water about an inch over the grains. I measure with my pinky finger - the water hits the first line on my finger. Barley takes a bit more water. Simmer with lid off until water is level to the grains, then reduce heat to the very lowest and place the lid on tight and steam for another ten minutes.
Add flavorings, peas, veggies, at the last few minutes, or cook a little longer. That's about it!  |

Hmmmm i better start to wash those grains ... 'cause when we know better we should do better !!!
Cold water or warm water ?? Does it really matter ??
