Okay i made this and its yummy, however i'm not sure i made it correctly ?

I soaked brown basmati and mung beans over night.
Then i prepared spices using garam masala spice and coconut oil, sauted the spices, added the garlic, 2 tablespoon of olive oil and the extra spices.
I then added 3 cups of water and the sauted spices to the rice/bean and started to cook for 20 minutes, added veg after 10 mins.

I wasn't sure if i was meant to start cooking the rice and beans before i added the sauted spices, and when i was to add veg, and also if there was water left after 20 minutes of cooking whether to drain or leave as extra sauce ??

Or was i meant to cook rice and beans and drain and then add the spices ?? I'm prob the only person who finds following a receipe confusing !! hah ha Smile

Soak the mung beans or any substitute beans or lentils over night. You don't have to soak the rice.

Start simmering the rice/beans in water, just enough water to be at the same height as the rice and beans, as you prepare your spices.

Add the spices and keep cooking until it's been cooking for about 30-45 minutes total. During this time, you will have to add water. Keep adding water as it boils off, keeping it at the consistency you like. I like it thick, a stew, but some people like it as a thin soup. Add any non-root veggies about 10 minutes before the end, when you think the beans are just about soft enough. Root veggies like carrots, potatoes, beets, turnips, should be added sooner, same time as the spices.
