things like balsamic vinegar and red/white wine alright to cook with? Im thinking of making a hearty lentil soup.

If balsamic vinegar is the one that you like most, go for it. Shelley is suggesting apple cider for his beneficial things. But they just don't have the same health benefits. They're still a disinfectant but not as nutritional or stone dissolving, etc.
If you're on anti Candida diet skip wine, as alcohol is something you should avoid. Once you replace your microbes and have taken enough of Vitamin C and Zinc its okay to add red wine back into your diet occasionally.
It is much healthier to make broth. The recipe you can find in the FAQ under Essential recipes.
