I made the kichadi, and Im not crazy about the flavor. I would like to make it with more of a mexican spice taste. But I dont know how to cook. Does anyone have any suggestions? Like Garam Masala has a list of spices that make it Indian, is there a Mexican spice like that? I love canned chilibeans. But clearly that is not healthy.

But cayenne is also very hot, and pungent spices if you can handle it are ok, as long as you balance and not overdose.
But what you have in Garam Masala are some pungent spices like cumin seeds, cinnamon, ground coves, turmeric, ground cumin that are just hit off very well with the rest of ingredients.
I think you're just not fond of Eastern cuisine, and most people aren't.
I guess if you make it with Mexican spices it wouldn't look like Indian meal at all.
Give it a try and see how it goes.

Hi Katie, the following can be used to create a more Mexican dish. You can either mix them before hand and use just a tsp or so, or experiment with a few that you fancy. Some supermarkets sell similar pre-mixed spices.
(The following amounts are to make your own mix).

1 Tbs. chili powder
1 tsp. cayenne pepper
1-1/2 tsp. cumin
1 Tbs. oregano leaves
1-1/2 tsp. onion powder
1/2 tsp. coriander
1 tsp. crushed red pepper flakes
1 Tbs. garlic powder
1 Tbs. black pepper

I love to experiment with recipes, and very rarely follow one properly. I have used a little cayenne pepper, cumin and oregano in mine once, it was great. Another time I used red pepper, garlic and a little chilli. Fantastic. I also love the original kichadi, I just like to vary it sometimes.
