Hi Shelley,
I had a tought: what if I get occasionally some wheat like pita bread mmmmmm, combined with some cayenne pepper?! will that be something like acceptable cheating? I hope your answer is YES on this

Hi Ivana,
Sorry to jump into your posting..I'm afraid to eat Wheat & Gluten..any form of Bread actually..are there any other alternatives to Wheat,Gluten and Yeast Bread? |

of course, tons. Just hit the health food store and see. Ezekial bread is great, and breads made from Quinoa. I used to make tortillas from brown rice flour, came up great!  |

Hi Madelyn,
I found this recipe on the net for you didn't try it still but will give it a try today
Gluten free bread:
1-1/2 cups brown rice flour
1/2 cup soy flour
1 TBLs. baking powder
1/2 tsp. salt
1 egg
1 cup milk or water, I used water
1/4 cup oil
2 TBls vegetable glyserin
Combine all dry ingredients. Combine all liquid, add to dry. Pour into greased loaf pan. Bake 375 for 35-40 min.
quinoa tortillas:
2 1/2 cups quinoa flour
1 1/2 cups spelt flour
1 tsp salt
1 1/2 tsp baking powder
4 tbsp oil of choice
1 1/2 cups warm water
In large mixing bowl, combine dry ingredients and stir to blend. Add oil and water. Using a wooden spoon, mix until dough forms a ball. Turn out on well-floured surface and knead 10 minutes. Cover loosely with plastic wrap and let dough rest 10 minutes. Divide dough into 14 pieces and form into balls. With rolling pin (between plastic works great) flatten each ball into a 10 inch tortilla. Cook on a dry 12 inch heavy skillet or griddle 1 minute each side. Don't overcook or they'll get brittle. If they DO get brittle, they're still good for dipping. As you remove them, wrap in a large clean dish towel to keep warm.

Thank you so much!!I truly appreciate you posting these recipes..bless you! But I must ask what kind of oil would I use in the Gluten Free Bread? |
