I picked up some coconut cream today and with it was a leaflet for some great recipes I adjusted them for health reasons, give them a try and let me know how they turned out...
Coconut Pancakes
1 Cup healthy flour of you're choice
Stevia to taste
140ml coconut milk
1/4 cup of water
1 egg
1 tablespoon desiccated coconut
Combine flour, coconut milk, water and egg in a food processor (stevia to taste) blend till smooth, stir in coconut
Then cook like normal pancakes
Note: I have not tried this recipe the original recipe called for 1/3 cup caster sugar (stevia used) and 1 cup self-rasing flour (healthy flour used) so it might take some experimenting...
Also Shelly I know coconut milk/cream is very healthy and is recomended by all the top health ppl (rubin, mercola etc) but when homogenized (I think they all are anyway) is it damaged like cows/goats milk? What about the addition of vegetable gums to coconut milk/cream are they bad news are there any safe ones? I have the choice of a non-oranic coconut milk with no additives and an organic variety with 0.5% guar gum. Sorry for all the questions but I am not in a good state of health I have to watch everything little thing I eat. |

Not so damaged as cow/goat milk, nope, since it's a fruit.
Guar gum is a safe additive, it's often used in bowel cleansing formulas actually.  |
