Every now and again I get super-tired of my usual choices for breakfast, which are eggs, protein shakes and hot cereal, or sometimes ground turkey and veggies. When that happens I reach for a can of chinook salmon and make salmon patties.
Salmon patties are quick, easy and very tasty! There's really no wrong way to make them. You can bake them in a 350 degree oven, or fry them up on the stove - which is quicker and easier IMO. I like getting a bit of crunchy brown goodness so I usually opt for the frying pan.
A lot of people add bread crumbs to their fish patties but I've never seen the point of that. It was a habit started by thrifty homemakers who wanted to stretch their pennies, but it certainly doesn't work on a candida diet.
If you're cooking for one, keep an eye out for small cans of salmon. I don't trust Chicken of the Sea, as they've been known to do nasty things like kill dolphins when they fish for tuna.
Here's the basic recipe for canned salmon with options:
1 can of salmon, drained and flaked. I use two forks.
1 egg or just the egg yolk if it's a small can. This is to bind it together so you don't end up with salmon hash instead of a nice together patty.
You don't really need to add salt, there should be plenty of natural sea salt already there.
Some people add lemon juice, I don't. I like to add
Capers - yum yum!
Sliced green onion - just the green part
1 minced garlic clove
optional (if you have time)
minced celery
minced red bell pepper
minced yellow or white onion
freshly ground pepper or sometimes curry or dried prepared mustard
Mix together thoroughly and then take a large serving spoon and use one of the forks to shape the patties onto the spoon and then off the spoon onto the frying pan.
Your frying pan should be prepared with a tablespoon of butter or Ghee, add a bit of olive oil so the butter doesn't burn. You need medium heat, you should hear the patties sizzle.
Just two minutes each side should give them a nice brown. You can eat as is or serve with homemade mayo/tartare sauce. (tartare sauce is mayo with lemon and relish added, basically.)
For a complete meal make some basic veggies, or just stir-fry some fresh or frozen mixed veggies right in the salmon pan.  |

Hi Shelley
I started making these salmon patties last week when I saw you posting this, it's a 100% hit with everyone at home and they are always asking for more, more, more now! Served with basmati rice and stirfrued veggies. YUM! There was a special offer of the canned wild salmon in the shops, I've bought them out!
I added finely chopped up leeks, ginger, red onion, paprika, garlic, eggs, and some rice flour. |

Sure you can!
We had the salmon again tonight. This time, I added ground ginger, spring onions, cilantro, seaweed mix, eggs plus buckwheat flour. WOW!!! |
