I have read in several places that it's best to soak raw nuts and seeds prior to eating (to get rid of some toxin inherent in them). Is this really necessary? Also, what temp should the water be and how long should they soak? Thanks.

Room temperature, lightly salted water is all you need. Basically, you are encouraging them to sprout without waiting for them to actually sprout. This does neutralize acids that inhibit mineral absorption, and increases nutritional value and enzymes as the seeds come to life.

Is it necessary? Well, depends on how mineral-rich your diet is and how many nut/seeds you plan on eating and what stage you're in. If you plan on eating more than a handful a day, then yes, I'd soak them. If you're rebuilding, soak them. If you're just maintaining and eating a wide variety of foods, don't bother. Go ahead and roast them even. Smile

I've read that almond skins are toxic. So, do we have to peel the skins after soaking?

Oh yes. If you don't buy them already peeled, peel them, definitely.
