Every now and then I just really want some chocolate. I take unsweetened dark bakers chocolate, mix it with a little butter, stevia and rice milk and melt it all together. It really satisfies my chocolate craving and I'm usually good for the week.
Is this OK? I have been under the impression that chocolate is not as bad as all the stuff that's mixed with it. But figured I would check

That's fine if you get gourmet quality chocolate. Regular baker's chocolate in the regular grocery store is junk, really only about 20% cocoa. I won't even make brownies with it. You need to get something that is 70% pure cocoa or better. A gourmet chocolate will say what the percentage is. I usually use Scharfenberger.

Making your own hot chocolate or chocolate sauce from a really good cocoa is a fine way to enjoy chocolate! as is chocolate fondue. Since you have total control over what fats you add, it's really not that bad for you, you're right about that. Just enjoy it judiciously (once or twice a week, not every day) and you're fine!  |

I really like to add cocoa powder (unsweetened and organic) to a joghurt/kefir bowl. I then add stevia and a tbls of lecithin plus sprinkle some cinamon on top.
It tastes really really good and it fills the gap where i used to eat chocolate ice cream ( as a comfort food) I have it in the evening when i want something sweet, creamy and tasting of choclate  |

I get dark organic cocoa, a generous spoonful, and make with about 1/3 warmed milk, 2/3 boiling water, and add a spoonful of molasses. It used to be honey, or even no sweetener, but I'm trying to increase my iron levels (well, that's my excuse ) It makes a lovely comforting drink, and helps get a good nights sleep. |

oooo... this is great... you guys are inspiring me to create a sinful tonic!!!
Let's see...
8 ounces Kefir or yogurt
1 tablespoon unsulphured blackstrap molasses (it really is a great source of iron)
1/2 cup unsweetened, high-quality, organic cocoa powder, preferably 70% pure or above
1 egg yolk
1 tablespoon lecithin
1/2 teaspoon Vanilla extract
1/2 teaspoon Cardamom
put into blender and blend. Adjust flavors as necessary. May need to add Stevia or honey if the kefir is really sour.
