does kefir become stronger, ie, more potent against candida, the longer it ferments? i let the last batch sitlonger, about 2 days, and 3 in the fridge and its realy tangy.

Yep, the longer the microbes feed the more microbes you have and the less chance of any milk sugars remaining. Candida people who make their own kefir should let the kefir age at least 2 days minimum before partaking. Those who have recovered their balance don't have to wait as long.
