Hey Shelley,
I was making kefir from goat's milk (pasteurized, but organic and non-homogenized) for several months, but I have gotten sick of the taste. But I still want to get a good amount of calcium in my diet, and I'd rather get it from food than a supplement. So I was thinking of just drinking goat's milk, just a cup a day or less. Do you think that taking a digestive enzyme pill when I drink it will more or less make up for what's lost from the pasteurization? |

It will help with digestion as in lactose intolerance, and yes make it somewhat easier to digest despite the problems associated with pasteurization.
Ayurvedic medicine says that if you're going to cook milk, then cook it a long time with pungent herbs that dispel dairy's tendency to create mucus. When milk is pasteurized it is "flash" boiled - just very quick and short. A gentle simmer of 10 minutes with ginger, cardamom seeds, a couple cloves, then adding honey afterwards, is a wonderful and tasty way to get your calcium and health benefits too. It is a natural sleeping aid and cure for constipation.
If you don't want to cook it, and wish to drink it cold, don't have more than 8-12 ounces at a time unless it's an entire meal. |
