Since eating sugar with the fiber is bad for Candida does that mean my Vita Mix isn't going to be ideal since it just blends everything up? Or does it break it down enough that it will digest quickly enough?

Remember the basic rules of fighting candida: any carbs can feed it if not heavily spiced or if they stick around in the digestive system long enough. Fiber tends to slow things down, but it's not easy for candida to digest. If it's mixed with lots of sugars, whether natural or simple, it will slow them down and give candida a chance at them. So best to keep your juices as just juice, and use the vita mix like a blender for blended meals which are fantastic becuase they're so easy to digest. Just spice them heavily.
