I had some leftover cooked amaranth, so I made these. The amaranth is kind of gummy so they hold together really well.

Makes three 6'' pancakes

1/2 - 3/4 cup cooked amaranth; more or less
2 eggs
1 green onion, minced
2 cloves garlic, minced
sea salt

Mix everything together. Use more or less amaranth to make a batter the consistency of regular pancake batter or slightly thicker.

Fry in ghee or butter. Pour the batter in to make pancakes 5-6 inches across. Flip when firm.

I ate them with more ghee and sauerkraut.

They would work as a sweet pancake too, or with any other flavorings you want to add.
