I posted a recipe in my old forum I think! It's a great meal. Basically, take your best broth, add some salt to taste, scallions, bring it to a low simmer, scramble a free-range egg or two, swirl the soup and slowly pour in the eggs.
If you want more ballast and nutrition, add bean sprouts and put half an avocado, chopped, in the soup bowl. Yummmmmmmm! |

I LOVE egg drop soup and have experimented with adding ingredients. Here's some stuff I came up with:
small pasta - I really like the seminole corkscrew New Season's carries. You have to cook the pasta in the broth before you put the egg in. Make sure to put enough extra broth in there to account for the amount the pasta will soak up.
Chicken - you can bake some chicken, putting whatever spices you want on it (salt/pepper is fine), and then chop or shred it and stick it in
Corn meal - if you can handle corn, this is a great way to make the soup more hearty - it thickens with some flavor. Add it 1/8 cup at a time waiting 3-5 minutes between until its the texture you want. the corn meal takes some time to absorb the liquid so don't add too much too soon!
This sounds so good i might make it tonight! |
