Hi Shelley
I was wondering ... how long can we leave cooked foods at room temperature before they start to accumulate bacteria ??

| Food safety laws state that you have to bring the temperature of cooked food down to 40 degrees or below within .... 20 minutes? I think? or throw it out. |

Is it ok to cook foods like rice, eggs, meat or vegetables ... let them stay on the counter 20 minutes and after that either refrigerate or freeze them even "IF" they r still warm somewhat???

| yes and no. You are encouraging the growth of baddies by leaving them out of the fridge for 20 minutes, but once you refrigerate them that will stop. I figure the fridge can handle it. |

Oh really ???!!!!
That means that the minute I cook the foods; I can refrigerate them RIGHT AWAY then?? Even pipping hot ?????
WOW ... I thought that it was always better to let the foods cool off first ... GEEZ,
I was really under the wrong impression all these years

| I think the reason for letting food cool alittle is for the extreme temp. change. Like if you put something hot in glass and then put in refrig. then it may crack the glass. If you use plastic it my worp the plastic and the lid my pop off. |

Thanks ... i do agree ... that's precisely why i wait usually till the foods cool off ... however; at the same time do NOT want the baddies to get to my food
It's a catch 22
