I'm really big on hot cereals thanks to Shelley and I remember reading about a gluten-free grain called Amaranth. I researched to see if any companies make a hot cereal out of it, and they don't. So I figured, I'll make my own So what I did was went to my local health food store, bought some amaranth grain, chopped them up in my little coffee grinder, and made cereal! It takes really good with a bunch of cinnamon and a little ginger, ghee/olive oil/coconut oil, some lecithin or yeast flakes, stevia and some almond milk if you want. It's very much like creamy brown rice.
Here's the recipe:
1. Bring 3/4 cup of water to a boil
2. Add 1/4 cup ground Amaranth and turn stove to low.
3. Stir occasionally until a creamy consistency.
4. Flavor and enjoy! |

if you're into that sort of thing you can sprout it too. ive been meaning to but am trying to figure out a way that ill be able to rinse it without losing it all down the sink.
your recipe sounds great, i know people who have done something similar but without grinding it first. myself, i would probably just sprout it, blend it up in the processor with almond milk (or just soaked almonds and a little water, and eat those sprouts without the cooking
sounds like you combined it well too! isnt it tempting to throw fruit or dried fruit in there with it ?  |

I use this super handy sprouter called EasySprout. It won't let the tiny Amaranth grains fall through. Here's a link to the cheapest one I've found online. Hope this helps.

| Just made some of this stuff today, about 1/2 cup with cinnamon and it was really good. I don't have a coffee grinder so I just used a blender. I like it much better than regular amaranth since it's less clumpy. |

| Excellent idea! Could I do the grinding-to-make-cereal thing with things like basmati rice and quinoa as well? How do I know when it is cooked properly? |

Yep! You'll know by consistency and by taste. If in doubt, do the slow cooking method. Right before bed, simply take a regular coffee thermos, put in two tablespoons or grains - whole or ground), cinnamon or other flavors, add boiling hot water, close the lid tightly, leave on the counter for breakfast the next morning.

| Shelley, this is a great idea. The grains/seeds get a good soak, and unlike when you keep it in the fridge, it isn't stone cold in the morning! I like my breakfast warm but do not like to use the microwave much any more, so I shall adopt this idea from now on. Thanks for the tip. |

I see you eat grains. Ive been trying to find an answer to my cookng dilemna. When I cook my grains, they are sticking to the pan BAD. Im doing just as you say. But I have an electric stove. What is the trick? I bring water to a boil, add the grains, reduce heat and simmer. But the cereal is still boiling for a few minutes. Am I suppose to just stir more?
