You're right to be concerned about young/green/unripe coconuts. Ayurvedic says to never eat anything unripe, and chemically there are good reasons for that. The fruit acids tend to have an acid, rather than alkaline, effect on the body when they are unripe. Now coconut is a weird fruit and may be a bit of an exception, but I doubt it.
You can easily eat 1/4 of a ripe coconut in one sitting provided you have decent power of digestion. And coconut milk or coconut cream is awesome, a nice change from our other "milk" choices.
You can test the rice milk with kinesiology, or better yet, make your own. It's really not that difficult! Nothing beats Kefir, however, but I understand the need for a change and a little variety. I like rice milk because you're supposed to use brown rice, which is one of the most balanced foods in the world. So far I haven't had any cause to make it myself, since I have access to raw milk and do just fine with the store bought, but I'm curious as to what the difference is so might make some soon anyway!
I totally understand your hesitation with processed foods. Rice milk does seem unnatural! But it's just soaked and ground up rice!
Perhaps you'd feel better using almond or hazelnut milk? Pacific has both available in cartons now, and they're quite good. They use brown rice syrup as a sweetener and that's a fantastic sweetener, has one of the lowest glycemic indexes of any semi-refined sweetener, and a great taste.
