I went into a wonderful organic bakery today and they were selling polenta cake, with almonds and orange peel. Very moist and slightly crumbly ... WOW, quite gorgeous, and the colour is so attractive.
I know it's corn meal, but is it healthy? I see it's gluten-free. |

Corn is often an allergan for people who eat the Standard American Diet because High Fructose Corn Syrup is used in place of sugar in just about every single fruit drink and processed food out there. It's even used in canning processes.
But not everyone is allergic to it. The only down side to corn is it's not all that nutritious. It's a starch, so it's mostly just complex carbs. So eat it sparingly, like rice, in place of rice occasionally and it's fine. Polenta is a very fun way to have corn, it's really versatile. You can do tons of things wtih polenta! My favorite thing to do with corn meal mush is to fry it up and serve it with maple syrup and butter. Yum! |
