I have the ingredients for kimchee and probably even sauerkraut and think I'll actually have some extra time, so I'm ready to take the plunge and try my hand at fermenting.
My main question is about the container...I was just thinking of using a couple of large jars - glass with screw-on tops. Should I leave the tops unscrewed? Will the kimchee bubble over as it ferments? (I think I just read that somewhere) Should I be worried about horrible smells during the process?
Seems like every source I read has different advice. Someone tell me everything will be alright!  |

If the jars are strong then you can screw the lid on if you prefer.
The kimchee that I made didn't bubble. But the sauerkraut & cortido (which I fermented for longer periods) did. You do get some "unusual" smells shall I say. If you have a lid on then this will take care of it (even if the lid isn't air-tight).
Everything will be alright! I promise you!
The golden rule is to try and exclude air in the best way you can. For me glass jars didn't work - I had the same dilemma as you - to screw or not to screw.
The water & weighted plate solution worked really well for me. |

I did fine with the tight mason jar lids, there was a lot of suction when I removed them. The book said to leave an inch between the top of the jar and the cabbage, I guess so there's room for the gas? Because the jars were so small I could use a glass or anything to weigh down the cabbage but it still turned out okay! I just made sure to tamp it down so all the air bubbles came out.  |
