Here are some great ways to get Cilantro into your diet. Why do you want more cilantro in your diet? Well, it's very high in calcium, and one cup of cilantro will give you every single mineral you could ever want! It also has natural chelating ability, getting rid of bad metals like mercury and lead as it gives you good minerals, so if you're having fish for lunch, you should have this too!
Bitter and astringent, it is perfect for Pitta people and Pitta ailments. It gently aids digestion without totally increasing digestive power to the point of burning and discomfort.
The recipes with yogurt are especially rejuvenating to the digestive tract.
Cilantro Chutney I
Good addition to bean burritos, garnish for soups, salads, bean dishes
2 bunches Cilantro –washed and tough stems removed
1 Roma Tomato or Vine Ripened Greenhouse tomato
About 1/8th of an Onion
Juice of 1 Lemon
1/2 tsp Salt
1/4 tsp Chili powder
Blend in food processor or blender. You can leave it somewhat chunky or pulse until smooth. Keeps in refrigerator for almost a week.
Cilantro Chutney II - Pungent Therapy
1 piece ginger, about 1 inch peeled
1 garlic clove
1 jalapeno, seeded and chopped
1 bunch cilantro, washed and tough stems removed
4 green onions, cut into 2" pieces
¼ cup mint, chopped
1 Tablespoon fresh lime juice
½ tsp ground cumin
1 tsp salt
1 tsp sugar
½ C. plain yogurt
Process the ginger, garlic and jalapeno in a food processor or blender.
Add the remaining ingredients except for the yogurt and pulse to chop the vegetables.
Add the yogurt and process to smooth sauce
Refrigerate until ready to serve.
Easier Cilantro Chutney
1 bunch cilantro, washed and tough stems removed
1/2 green chili, minced
2 Tablespoons lemon juice
1/2 teaspoon salt
Pepper
Place cilantro, chili, lemon juice and salt in a food processor.
Process, pushing down cilantro, until a smooth paste forms.
Season with pepper
Makes about 1/2 cup
This fresh chutney is great with any Indian meal and makes a tasty sandwich filling when lightly spread on cream cheese. |
