Both me and my boyfriend found that when we took Candida shakes (psyllium and caproil), we would retain water - evidenced by puffy face and body.

We would be taking about 2 shakes a day, always well away from food.

Why would this happen, and does it mean we shouldn't do the shakes?

That's interesting! It sounds like the shakes are still interfering with absorption, or your diet is lacking some things that lead to edema. Edema is caused by High/low sodium, high/low phosphorus, low iodine,
low magnesium, low potassium, high/low protein, low Vitamin B1, low Vit B6, low Vit B5, low Vit C.

For me the main culprits are protein, salt and potassium. If I skip too many protein meals, or neglect fresh fruits for too long, I'll get edema.
