Hi Shelley,

I'm following your diet and am planning to be really strict as you suggest for the first month. A few questions. I've been diagnosed with heavy metals and candida but my doctor didn't recommend a specific diet. I've been battling all of this for nearly 2 years. Do you think it's best to be strict for the first 3 months and eliminate the sweet potatoes and all grains? Or do you think I can let up and possibly add some sweet potatoes and rice pasta and basmati rice in the 2nd month (as long as prepared appropriately)? I have a hard time with limiting my grains/rice so the first month I'm planning to cut them out entirely but wasn't sure if I should keep them all out for 90 days.

As far as snacking, I would like to try eating Lentil salads, miso soup and hummus. Is there a good recipe for a lentil salad you or someone else can suggest? I'm planning to make my own hummus can that be eaten with raw veggies? Should I be careful what I eat it with and limit how much I have?

I'm a few days into this and noticing improvement. This is so helpful and your information is fantastic.

Hiya JB! sorry I missed this question. Okay. There's another post in here on carbs that explains a lot, check that one out.

As long as you eat small amounts and have strong digestion (adequate stomach acids and pancreatic enzymes and good transit times), then you can eat certain rices and grains as long as you prepare them properly. The best way is to make my Kichadi recipe, which is completely impregnated with spices that candida totally hates. You turn the rice and mung beans into a vehicle for anti-fungal herbs and spices - and it tastes delish!

I added sweet potatoes to my diet after 2 months? of abstinence of all starches and I had no problems with them. They really helped me be happy and full-feeling on the diet. I fixed them with lots of spices, usually with cinnamon which is a great anti-fungal, sometimes wtih rosemary. A bowl of basmati brown rice fixed Indian style (cloves, cumin, cardamom...) with either a boiled sweet potato or broiled sweet potato slices is one of my favorite meals.

I think quinoa pasta or brown rice pasta is okay from the first month on really, especially if you fix it like in the Cleansing Pasta recipe.
