Hey Shelley!
There are some days where I will go without food for many Hours, like let's say I will Skip breakfast or even the next meal, even when I'm very Hungry, like I can hear my stomach grumble, and yeah I will feel crappy and weak cause I didn't feed my self yet.

Is it true that we can stop making Digestive enzymes several hours after not feeding ourselves for while, even when we should have? (Hunger pains).
And after my hunger pains pass, will my Metabolism be slowed down, since I didn't eat when I should have? Plus I will not have Digestive enzymes available anymore, right?

So when I finally do eat will I be in trouble because my body won't be making anymore Enzymes? (since my body figured I was not going to eat).
And I'm worried if my Metabolism will be super slow, because of skipping a meal when I was actually really hungry.

I don't want my body to freak out and store the food as Fat instead of burning it off. Because I will be starving and might eat alot at that time, due to skipping the other important meals of the day. What can I do to speed up my Meatbolism when I finally do eat, OR at least keep my metabolism running normally when I go without food for long time?

And if I don't have Digestive enzymes to take, will my body still make them for me when I finally do eat?

Okay, you've got just part of the picture on metabolism so you're taking this is the wrong direction.

First of all, humans were not supposed to be constantly eating. Our bodies are designed to starve every now and again, and so skipping a meal or several meals once a week is what the body needs. It's because of constant meals that people get adult-onset diabetes. The body finally says "we can't take any more calories, so we're stopping them at the gate (no more insulin production)."

Scientists have proved over and over that cellular organisms live twice as long if fed only every-other day rather than every day. We just can't take out the garbage fast enough when we constantly eat 3 meals a day!!! So SKIP MEALS AND DON'T WORRY ABOUT IT!

Now when you skip meals you don't need digestive enzymes, naturally, as you're not digesting anything. You may not need any for your next meal either. If you have good stomach hunger, your digestive power/fire/agni is strong and supplementation is not necessary then unless you eat something really complicated like a pizza.

The metabolism overall won't slow down unless you starve yourself for a couple weeks at least so you're safe there too. After a couple weeks the body decides it must be winter, you'll be starving for awhlie, and so then it slows down.
