If I am taking a probiotic, do I need to take acidophillus too?

acidophilus IS a probiotic. So it depends on which probiotics you're already taking. If you're including kefir in your diet you probably don't need any special probiotic supplementation.

So when the bottle says "bifidus...." but not acidophillus, is acidophillus just another type of backteria?

Yep the two main types of good bacteria are the bifido-bacteria - mostly active in the colon and the lacto-bacteria (acidophillus is a type of lacto), which are mostly active in the small intestine.

Apparently bifido-bacteria outnumber lactobacteria 10-1 in the colon.

Acidophillus literally means "Acid loving".
