Instead of taking a thermos of coffee to work, why not take a hot lunch in a thermos and let it cook all morning while you work?
This is basically a congee meal with a little extra. And it really works! Since the ingredients can vary greatly, it can be different every day. What fun!
Ingredients:
2 cups water
2 tablespoons basmati rice
2 tablespoon lentils - any kind - mung bean, red lentils, green, yellow.
a bit of grated ginger
1 teaspoon cumin seeds
1 teaspoon turmeric
1/2 teaspoon curry paste (can use garam masala instead or just a bit of cayenne)
1 tablespoon Ghee or other cooking oil
1 cup fresh veggies chopped small enough to fit
sea salt to taste
On medium-low heat, saute the oil and spices until aromatic, about a minute or two. Add the rest of the ingredients and bring to a boil, allow to boil for 5 minutes then add to thermos flask and close the lid tight. DO NOT open it until time for lunch, hopefully at least 4 hours later.

| Am i doing something wrong, i left 1/4 cup of rice in a thermus with 2 cups boiling water, left over night, in the morning the rice was still hard and not soft. I tried it again in a saucepan with a lid, and the same thing happened! Maybe i need to get a better thermos ! ? |
