I'm trying to figure out if my honey went bad or if this is normal. It seems to have gotten less liquidy and more crystallized. It tastes fine, but it's definitely not the same consistency.

That's a really good question, one I haven't addressed yet.

It is totally normal for honey to crystallize because of the mono-sugars coming together over time. Mono-sugars are very simple forms that come together in precise structures, creating that crystal look, depending on the amount of water and percentage of glucose. It doesn't mean the honey went bad.

If you don't like the crystalization, simply warm the honey up slightly and it will return to a more viscous state.
